Ingredients
2 slices whole grain, sourdough, or multigrain bread
3 tablespoons hummus
1 ripe avocado, sliced or mashed
2 lettuce leaves
2 slices tomato
4 slices cucumber
1/4 small red onion, thinly sliced
1/4 cup shredded carrots
1/4 cup alfalfa sprouts or microgreens
Salt, to taste
Black pepper, to taste
1 teaspoon lemon juice (optional)
Everything bagel seasoning or sesame seeds (optional)
Instructions
Lightly toast the bread if desired.
Spread the hummus evenly over one slice of bread.
Spread or layer the avocado on the second slice and drizzle with lemon juice if using.
Season the avocado with salt and black pepper.
Layer the lettuce, tomato, cucumber, red onion, shredded carrots, and sprouts over the hummus.
Sprinkle with everything bagel seasoning or sesame seeds if desired.
