A cozy and comforting vegan French toast casserole made with soft bread soaked in a sweet, spiced plant-based custard and baked to golden perfection. Perfect for brunch or make-ahead breakfasts.

Ingredients

  • 6 cups bread, cubed
  • 2 cups plant-based milk
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup fresh berries (optional)
  • 1 banana, sliced (optional)
  • 1/2 cup chopped nuts (optional)
  • 1/3 cup raisins or dried fruit (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Spread cubed bread evenly in the dish.
  3. In a bowl, whisk together plant-based milk, maple syrup, brown sugar, cornstarch, cinnamon, vanilla, and salt until smooth.
  4. Pour mixture evenly over the bread, pressing down gently to help absorption.
  5. Let sit for 10 minutes or refrigerate overnight for deeper flavor.
  6. Add optional toppings like berries, bananas, nuts, or dried fruit.
  7. Bake for 35–40 minutes until golden and set in the center.
  8. Cool slightly and serve warm with extra maple syrup if desired.

Notes

  • Use slightly stale bread for best texture.
  • Oat, almond, soy, or coconut milk all work well.
  • Add a crumb topping for extra crunch.
  • Store leftovers in the refrigerator for up to 4 days.
