Vegan Farro Salad is a fresh, hearty grain salad made with chewy farro, crisp vegetables, fresh herbs, crunchy nuts, and a bright lemon vinaigrette. It’s perfect for meal prep, lunch, or a wholesome side dish.

Ingredients

  • 1 cup uncooked farro
  • 3 cups water or vegetable broth
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional)
  • 1/4 cup toasted walnuts or sliced almonds
  • 2 tablespoons sunflower seeds or pumpkin seeds
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the farro under cold water.
  2. Bring the water or vegetable broth to a boil, add the farro, reduce the heat, and simmer until tender according to the package directions.
  3. Drain any excess liquid and allow the farro to cool completely.
  4. Whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, salt, and black pepper to make the dressing.
  5. Combine the cooled farro, cucumber, cherry tomatoes, bell pepper, red onion, parsley, mint if using, walnuts or almonds, and seeds in a large bowl.
  6. Pour the dressing over the salad and toss until everything is evenly coated.
  7. Refrigerate for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • Add chickpeas for extra plant-based protein.
  • Mix in roasted zucchini, eggplant, or asparagus for additional vegetables.
  • Substitute pecans, pistachios, or almonds for the walnuts.
  • Add dried cranberries or chopped dates for a touch of sweetness.
  • Top with sliced avocado just before serving for extra creaminess.
  • Store in an airtight container in the refrigerator for up to 5 days. Refresh with a squeeze of lemon juice or a drizzle of olive oil before serving if needed.
