A creamy, sweet vegan protein shake with classic birthday cake flavor from vanilla, almond extract, and colorful sprinkles. It is a quick, festive option for breakfast, post-workout fuel, or a dessert-inspired snack.

Ingredients

  • 1 cup unsweetened almond milk or another plant-based milk
  • 1 scoop vegan vanilla protein powder
  • 1 frozen banana
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • 1 tablespoon cashew butter or almond butter
  • 1/2 to 1 cup ice cubes
  • 1 tablespoon vegan rainbow sprinkles, plus extra for serving
  • 1 to 2 teaspoons maple syrup, optional for extra sweetness
  • Vegan whipped cream, optional for serving

Instructions

  1. Pour the plant-based milk into a blender.
  2. Add the vegan vanilla protein powder, frozen banana, vanilla extract, almond extract, nut butter, and ice cubes.
  3. Blend on high until completely smooth and creamy. Add a splash of plant-based milk if the shake is too thick, or add a few more ice cubes if it is too thin.
  4. Taste and add maple syrup if additional sweetness is desired.
  5. Add the vegan rainbow sprinkles and pulse once or twice, taking care not to overblend so the colors do not bleed into the shake.
  6. Pour into a glass and serve immediately. Top with vegan whipped cream and additional sprinkles if desired.

Notes

  • For a strawberry version, blend in a handful of frozen strawberries.
  • For a chocolate version, add cocoa powder or substitute vegan chocolate protein powder while keeping the vanilla and almond extracts.
  • For a banana-free shake, substitute frozen avocado, frozen cauliflower, or additional ice and add extra nut butter or maple syrup as needed.
  • For a smoothie bowl, reduce the plant-based milk and add extra frozen banana or ice for a thicker consistency.
  • Oat milk or soy milk can be used for an extra-creamy texture.
  • For a nut-free version, use oat or soy milk and sunflower seed butter, and verify that the protein powder and sprinkles are nut-free.
  • The shake is best served immediately. Leftovers can be refrigerated in a sealed container for up to 24 hours and reblended with ice before serving.
  • Leftovers can also be frozen in an ice cube tray and later blended with a splash of plant-based milk.
