Ingredients
3 large very ripe bananas, mashed
1/2 cup granulated sugar or brown sugar
1/3 cup neutral vegetable oil
1/4 cup unsweetened plant-based milk
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup chopped walnuts, optional
1/2 cup vegan chocolate chips, optional
Instructions
Preheat the oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
Place the ripe bananas in a large mixing bowl and mash thoroughly with a fork until mostly smooth.
Add the sugar, vegetable oil, plant-based milk, and vanilla extract. Whisk until well combined.
In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, and salt.
Gradually add the dry ingredients to the banana mixture and gently stir just until no dry flour remains. Avoid overmixing.
Fold in the chopped walnuts or vegan chocolate chips, if using.
Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with only a few moist crumbs.
Let the banana bread cool in the pan for 10–15 minutes, then transfer it to a wire rack.
Allow the loaf to cool further before slicing for cleaner, more even slices.
Notes
Use very ripe bananas with heavily spotted or brown skins for the sweetest flavor and best moisture.
Do not overmix the batter, as this can make the banana bread dense.
For chocolate chip banana bread, fold in 1/2 cup vegan chocolate chips and sprinkle extra chips over the top before baking.
For walnut banana bread, add 1/2 cup chopped walnuts. Toasting the walnuts first can enhance their flavor.
For chocolate banana bread, replace about 1/4 cup of the flour with unsweetened cocoa powder and add vegan chocolate chips.
Fresh or frozen blueberries can be folded into the batter. Add frozen blueberries without thawing them first.
For a spiced loaf, increase the cinnamon and add a small amount of nutmeg or ground ginger.
Store cooled banana bread in an airtight container at room temperature for 2–3 days or refrigerate for up to 5 days.
Freeze the whole loaf or individual wrapped slices in a freezer-safe container for up to 3 months.
