Vada (Lentil Fritters) Recipe

Vada are crisp Indian lentil fritters made from soaked urad dal blended into a fluffy batter with chilli, ginger, curry leaves, and aromatic seasonings. Deep-fried until golden, they have a crunchy exterior and a soft, savory center.

Ingredients

  • Urad dal (split black gram without skins)
  • Onion, finely chopped
  • Fresh green chillies, finely chopped
  • Fresh ginger, grated or finely chopped
  • Curry leaves, finely sliced
  • Fresh cilantro, chopped
  • Cumin seeds
  • Black pepper
  • Salt
  • Water, as needed
  • Neutral oil, for deep-frying

Instructions

  1. Rinse the urad dal thoroughly, cover it with plenty of water, and soak for 4–6 hours.
  2. Drain the soaked lentils very well and transfer them to a blender or food processor.
  3. Blend into a thick, smooth batter, adding water only a little at a time when necessary. Keep the batter thick rather than runny.
  4. Transfer the batter to a bowl and beat vigorously for several minutes to incorporate air and create lighter, fluffier vada.
  5. Fold in the finely chopped onion, green chillies, ginger, curry leaves, cilantro, cumin seeds, black pepper, and salt.
  6. Heat neutral cooking oil in a deep, heavy-bottomed pan to approximately 350°F (175°C).
  7. Lightly wet your hands with water, take a portion of batter, and shape it into a small round patty. For traditional medu vada, make a hole through the center with a finger.
  8. Carefully slide the shaped vada into the hot oil, frying only a few at a time to avoid overcrowding the pan.
  9. Fry, turning occasionally, until the vada are evenly crisp and deep golden on both sides.
  10. Remove with a slotted spoon and drain on paper towels or a wire rack.
  11. Serve immediately while hot and crispy with chutney, sambar, or another preferred accompaniment.

Notes

  • Use as little water as possible when blending the soaked urad dal. A thick batter helps the vada hold their shape and reduces excessive oil absorption.
  • Beat the blended batter vigorously before adding the seasonings to incorporate air and create a lighter interior.
  • Keep the frying oil near 350°F (175°C); oil that is too cool can cause the vada to absorb excessive oil.
  • Wet your hands lightly with water before shaping each vada to prevent the sticky batter from clinging to your fingers.
  • For extra texture, add crushed black peppercorns or finely chopped fresh coconut to the batter.
  • Increase the green chilli or add red chilli powder for additional heat.
  • Extra curry leaves, cilantro, or a pinch of asafoetida can be added for more aromatic flavor.
  • Store cooled leftover vada in an airtight container in the refrigerator for up to 2–3 days.
  • Reheat in an oven or air fryer to restore the crisp exterior rather than using a microwave.
  • Cooked and cooled vada can be frozen in a freezer-safe container and reheated from frozen or after thawing.
