Ube Pancakes are a vibrant twist on the classic breakfast favorite. Soft, fluffy, and packed with the sweet, earthy flavor of ube, these pancakes are topped with butter, syrup, or whipped cream for a fun and colorful brunch or breakfast.

Ingredients

  1. 1 cup all-purpose flour
  2. 2 tablespoons sugar
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon vanilla extract
  6. 1/2 cup ube jam (or ube puree)
  7. 1 cup milk (dairy or plant-based)
  8. 1 large egg
  9. 2 tablespoons melted butter or vegetable oil
  10. Butter or oil for cooking

Instructions

Prepare the pancake batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  1. In a separate bowl, mix the ube jam (or ube puree), milk, egg, and melted butter or oil until smooth.
  2. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  3. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  4. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on each side, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes, or until golden brown and cooked through.
  5. Serve: Stack the pancakes on a plate and serve with syrup, whipped cream, or your favorite toppings. Fresh fruit, toasted coconut, or a drizzle of condensed milk also pair well with these ube pancakes.

Notes

  1. If you prefer a sweeter pancake, you can increase the sugar or drizzle sweetened condensed milk on top.
  2. Ube extract can be used as a substitute for ube jam, but adjust the sweetness accordingly.
  3. For a vegan version, use plant-based milk, a flax egg, and vegan butter.
