Ube Cookies are soft and chewy treats flavored with sweet purple yam for a unique vanilla-like taste and vibrant purple color. These rich buttery cookies are fun, colorful, and perfect for parties, holidays, or everyday snacking.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ube halaya or ube jam
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • Extra white chocolate drizzle (optional)
  • Toasted coconut flakes (optional)
  • Crushed nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in the egg and vanilla extract.
  5. Add the ube jam and stir until fully combined.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  8. Fold in the white chocolate chips.
  9. Scoop portions of dough onto the prepared baking sheet, leaving space between each cookie.
  10. Bake for 10 to 12 minutes, or until the edges are lightly set.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Add macadamia nuts or toasted coconut for extra texture and flavor.
  • Chill the dough briefly if the cookies spread too much during baking.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Freeze baked cookies or dough portions for up to 2 months.
