Turkish Ramadan Bread, also known as Ramadan Pidesi, is a soft, fluffy flatbread with a beautifully patterned golden crust topped with sesame and nigella seeds. Perfect for breaking the fast or serving alongside soups, stews, cheeses, and spreads, it is a beloved traditional Turkish bread.

Ingredients

  • All-purpose flour
  • Warm water
  • Warm milk
  • Active dry yeast or instant yeast
  • Granulated sugar
  • Salt
  • Olive oil
  • Plain yogurt
  • Egg yolk
  • Sesame seeds
  • Nigella seeds (black cumin seeds)
  • Melted butter (optional, for brushing after baking)

Instructions

  1. Combine the warm water, warm milk, yeast, and sugar in a bowl and let the mixture sit until foamy.
  2. Add the flour, salt, olive oil, and yogurt, then mix until a soft dough forms.
  3. Knead the dough until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover, and let it rise until doubled in size.
  5. Gently deflate the dough and shape it into a large round or oval loaf on a parchment-lined baking tray.
  6. Let the shaped dough rise again until slightly puffy.
  7. Brush the surface with beaten egg yolk and create the traditional crisscross pattern using your fingertips or the back of a knife.
  8. Sprinkle sesame seeds and nigella seeds evenly over the top.
  9. Bake in a preheated 425°F (220°C) oven for 18–22 minutes, or until puffed and deeply golden.
  10. Brush with melted butter if desired, then let cool slightly before serving.

Notes

  • Replace part of the all-purpose flour with bread flour for a chewier texture.
  • Use honey instead of sugar for a subtle sweetness.
  • Add black sesame seeds along with the traditional toppings for extra flavor.
  • Brush with melted butter immediately after baking for a softer, glossy crust.
  • Store at room temperature in an airtight container for up to 2 days.
  • Freeze slices or the whole loaf for up to 3 months.
  • Reheat in a 325°F (165°C) oven for 8–10 minutes before serving.
