Turkish Bulgur Salad (Kısır) is a vibrant, healthy salad made with bulgur wheat, fresh vegetables, herbs, and a tangy lemon dressing. This refreshing dish is perfect for picnics, BBQs, or a nutritious meal any time of day.

Ingredients

  1. 1 cup fine bulgur wheat
    1 1/4 cups boiling water
    1/2 cup cucumber, diced
    1/2 cup tomatoes, diced
    1/4 cup red onion, finely chopped
    1/2 cup bell pepper, diced
    1/4 cup fresh parsley, chopped
    2 tbsp fresh mint, chopped
    2 tbsp olive oil
    2 tbsp lemon juice
    1 tbsp pomegranate molasses (optional, for extra flavor)
    1 tsp ground cumin (optional)
    Salt and pepper to taste

Instructions

In a medium bowl, pour the boiling water over the bulgur wheat. Cover and let it sit for about 10-15 minutes, or until the water is absorbed and the bulgur is tender. Fluff with a fork and allow it to cool.

  1. Once the bulgur has cooled, add the diced cucumber, tomatoes, red onion, bell pepper, parsley, and mint to the bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, pomegranate molasses (if using), cumin, salt, and pepper until well combined.
  3. Pour the dressing over the bulgur and vegetable mixture, tossing gently to coat all ingredients evenly.
  4. Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice to suit your preference.
  5. Serve immediately, or refrigerate for 30 minutes to let the flavors meld. This salad can be stored in the fridge for up to 2 days.

  • For extra protein, add chickpeas, grilled chicken, or lamb.
  • Swap the bell pepper with a jalapeño for a spicy kick.
  • To make this salad gluten-free, replace bulgur with quinoa or couscous (though couscous is not typically gluten-free).
