Ingredients

  1. 2 tablespoons olive oil
  2. 1 onion, diced
  3. 3 carrots, sliced
  4. 2 celery stalks, sliced
  5. 3 cloves garlic, minced
  6. 8 cups turkey or chicken broth
  7. 2 cups cooked turkey, shredded or chopped
  8. 2 cups egg noodles or pasta of choice
  9. 1 teaspoon dried thyme
  10. 1 teaspoon dried parsley
  11. Salt and pepper to taste
  12. Optional garnish: fresh parsley, lemon wedges

Instructions

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.

  1. Stir in garlic, thyme, and parsley. Cook for 1 minute until fragrant.
  2. Pour in broth and add cooked turkey. Bring to a boil.
  3. Add noodles and cook according to package instructions until tender.
  4. Taste and season with salt and pepper as needed.
