Ingredients
2 cups cooked turkey, shredded or diced
2 cups cooked rice or pasta
2 tablespoons butter
1 small onion, chopped
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, or green beans)
1 can (10.5 oz) cream of mushroom or chicken soup
1/2 cup milk
1 cup cheddar or mozzarella cheese, shredded
1/2 cup breadcrumbs (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon parsley (optional)
Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Melt butter in a skillet over medium heat. Add chopped onion and cook until softened, then add garlic and cook briefly.
Add mixed vegetables and cook for a few minutes until slightly tender.
In a large bowl, combine cooked turkey, rice or pasta, sautéed vegetables, cream soup, milk, and half of the shredded cheese. Mix well.
Season with salt, pepper, and parsley if using.
Transfer mixture to prepared baking dish and spread evenly.
Top with remaining cheese and breadcrumbs if desired.
Bake for 30–35 minutes until hot, bubbly, and golden on top.
Let cool slightly before serving.

Use quinoa or mashed potatoes instead of rice or pasta for variation.
Add extra vegetables like mushrooms, spinach, or broccoli.
