Turkey and Hummus Pinwheels are a simple, flavorful, and healthy snack or appetizer that combines lean turkey slices with creamy hummus, fresh vegetables, and wraps them all up in a tortilla. These bite-sized delights are perfect for lunchboxes, parties, or as a light, nutritious snack.

Ingredients

  1. 4 whole wheat or flour tortillas
    8 oz lean turkey breast slices
    1/2 cup hummus (store-bought or homemade)
    1/2 cucumber, thinly sliced
    1/4 cup red bell pepper, thinly sliced
    1/4 cup spinach or lettuce leaves
    1/4 cup shredded carrots
    Salt and pepper to taste

Instructions

Lay the tortillas flat on a clean surface.

  1. Spread a thin, even layer of hummus over each tortilla, leaving a small border around the edges.
  2. Layer the turkey slices evenly on top of the hummus.
  3. Add a handful of sliced cucumber, red bell pepper, spinach (or lettuce), and shredded carrots on top of the turkey.
  4. Season with salt and pepper to taste.
  5. Carefully roll up the tortilla, ensuring all the ingredients stay tucked inside as you roll.
  6. Once rolled, slice the tortilla into 1-2 inch pinwheels.
  7. Arrange the pinwheels on a plate and serve immediately, or cover and refrigerate for up to 2 hours before serving.
