Ingredients
1 package Trader Joe’s Holiday Vegetable Hash
1 lb Italian sausage (pork, chicken, or turkey), casings removed
2 tbsp olive oil
3 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
4 cups chicken or vegetable broth
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
1 tsp chopped fresh thyme or rosemary (optional)
2 cups chopped kale or spinach (optional)
Instructions
Heat olive oil in a large pot over medium heat.
Add sausage and cook until browned and cooked through, breaking it up with a spoon. Remove and set aside.
Add the Holiday Vegetable Hash to the same pot and sauté for 5–7 minutes until softened and slightly caramelized.
Add minced garlic and cook for another minute until fragrant.
Return the sausage to the pot. Add crushed tomatoes and broth, stirring to combine.
Season with salt, pepper, red pepper flakes, and herbs if using. Bring to a boil.
Reduce heat and simmer uncovered for 20–25 minutes.
Stir in kale or spinach if using and cook for another 2–3 minutes until wilted.
Adjust seasoning to taste and serve hot.
Notes
Make it vegetarian by using plant-based sausage or beans instead of meat.
For a creamy version, add a splash of heavy cream or coconut milk at the end.
Freeze leftovers for up to 3 months; cool completely before freezing.
Use homemade diced vegetables if Holiday Hash is unavailable.
Add cooked grains like quinoa or rice for extra heartiness.
