Tomato Rice is a flavorful one-pot dish made with tender rice, juicy tomatoes, onions, and warm spices. This comforting and versatile recipe is perfect as a quick meal or savory side dish.

Ingredients

  • 1 cup long-grain rice
  • 2 tablespoons oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 1 tablespoon tomato paste
  • 2 cups vegetable broth or water
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin
  • Fresh parsley (optional garnish)
  • Green onions (optional garnish)
  • Grated Parmesan cheese (optional garnish)

Instructions

  1. Rinse the rice under cold water until the water runs mostly clear, then drain well.
  2. Heat the oil or butter in a large skillet or saucepan over medium heat.
  3. Add the chopped onion and cook until softened.
  4. Stir in the garlic and cook for about 30 seconds until fragrant.
  5. Add the chopped tomatoes and tomato paste, cooking until the tomatoes soften and release their juices.
  6. Season with salt, black pepper, paprika, and cumin.
  7. Add the rice and stir well to coat the grains with the tomato mixture.
  8. Pour in the vegetable broth or water and bring the mixture to a boil.
  9. Reduce the heat to low, cover, and simmer for 15 to 18 minutes until the rice is tender and the liquid is absorbed.
  10. Remove from heat and let the rice rest for 5 minutes.
  11. Fluff gently with a fork before serving.
  12. Garnish with parsley, green onions, or Parmesan cheese if desired.
