This Tomato Peach Caprese with Brown Butter is a fresh twist on the classic Caprese salad, combining juicy peaches, ripe tomatoes, creamy mozzarella, and fragrant basil with warm, nutty brown butter. It’s an elegant seasonal dish that’s perfect as an appetizer, light lunch, or side.

Ingredients

  • 2 ripe peaches, sliced
  • 2 large heirloom tomatoes or ripe tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced or torn
  • 1/4 cup fresh basil leaves
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons toasted pine nuts or chopped pistachios (optional)

Instructions

  1. Arrange the sliced tomatoes, peaches, and fresh mozzarella on a serving platter, alternating the layers.
  2. Tuck fresh basil leaves throughout the salad.
  3. Melt the butter in a small saucepan over medium heat, stirring frequently until it turns golden brown and develops a nutty aroma.
  4. Remove the brown butter from the heat immediately to prevent burning.
  5. Drizzle the warm brown butter evenly over the tomatoes, peaches, and mozzarella.
  6. Drizzle lightly with olive oil followed by the balsamic glaze.
  7. Season with flaky sea salt and freshly ground black pepper.
  8. Sprinkle with toasted pine nuts or chopped pistachios if desired.
  9. Serve immediately while the brown butter is still warm.

Notes

  • Substitute burrata for mozzarella for an extra creamy version.
  • Use nectarines instead of peaches when in season.
  • Add thin slices of prosciutto for a savory variation.
  • Finish with hot honey or fresh thyme for additional flavor.
  • Store leftovers in the refrigerator for up to 1 day and add freshly made brown butter just before serving for the best flavor.
