Tomato, Peach, and Burrata Salad is a fresh and elegant summer dish featuring juicy tomatoes, sweet peaches, creamy burrata, and fragrant basil finished with a simple vinaigrette. It’s a beautiful no-cook salad that’s perfect as a light lunch, appetizer, or side for warm-weather gatherings.

Ingredients

  • 2 ripe peaches, sliced
  • 3 large ripe tomatoes, sliced or cut into wedges
  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1 tablespoon fresh lemon juice (optional)
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons toasted pine nuts or chopped pistachios (optional)

Instructions

  1. Wash and thoroughly dry the peaches, tomatoes, and basil.
  2. Slice the peaches into wedges and cut the tomatoes into slices or wedges.
  3. Arrange the peaches and tomatoes on a large serving platter, alternating them for an attractive presentation.
  4. Place the burrata in the center of the platter or tear it into large pieces and distribute it over the salad.
  5. Scatter the fresh basil leaves evenly over the top.
  6. Drizzle with the extra-virgin olive oil.
  7. Lightly drizzle with balsamic glaze and add a squeeze of fresh lemon juice if desired.
  8. Season with flaky sea salt and freshly ground black pepper.
  9. Sprinkle with toasted pine nuts or chopped pistachios if using.
  10. Serve immediately, optionally with crusty bread.

  • Substitute nectarines or plums for the peaches if desired.
  • Fresh mozzarella can replace burrata for a similar but less creamy result.
