This tomato basil tart features a flaky puff pastry base topped with creamy cheese, juicy tomatoes, and fresh basil. It’s a simple yet elegant dish perfect for brunch, appetizers, or light meals.

Ingredients

  • 1 sheet puff pastry (thawed)
  • 23 medium tomatoes, thinly sliced
  • ½ cup ricotta or cream cheese
  • ½ cup shredded mozzarella or parmesan
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh basil (plus extra for garnish)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry slightly and place it on the baking sheet.
  3. Score a border 1–2 cm from the edges without cutting through.
  4. In a bowl, mix ricotta or cream cheese with garlic, salt, and pepper.
  5. Spread the cheese mixture evenly within the border.
  6. Arrange tomato slices in a single layer over the cheese.
  7. Drizzle with olive oil and sprinkle with shredded cheese.
  8. Bake for 20–25 minutes until pastry is golden and crisp.
  9. Let cool slightly, then top with fresh basil before serving.
