Ingredients

  • 2 large cucumbers
  • 3 medium ripe tomatoes, cut into wedges

  • 2 tablespoons fresh cilantro or parsley, chopped
  • 2 tablespoons rice vinegar or red wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon soy sauce
  • 1 garlic clove, minced
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Sesame seeds (optional garnish)

Instructions

  1. Place the cucumbers on a cutting board.
  2. Using the flat side of a large knife or a rolling pin, gently smash the cucumbers until they crack and split.
  3. Cut the smashed cucumbers into bite-sized pieces.
  4. Place the cucumber pieces in a large mixing bowl.
  5. Add the tomato wedges, red onion, and chopped cilantro or parsley.
  6. In a small bowl, whisk together the vinegar, olive oil, soy sauce, garlic, sugar, salt, and black pepper.
  7. Pour the dressing over the salad.
  8. Toss gently until evenly coated.
  9. Let the salad rest for 5 to 10 minutes to absorb the flavors.
  10. Garnish with sesame seeds, red pepper flakes, or sliced green onions if desired.
  11. Serve immediately.
