Tofu Lemon Mousse is a light, silky dessert made with creamy silken tofu and fresh lemon for a bright, refreshing finish. It’s quick to prepare, naturally satisfying, and perfect as a make-ahead treat.

Ingredients

  • 14 ounces (400 g) silken tofu
  • 1/3 cup maple syrup or honey
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh berries, for garnish (optional)
  • Mint leaves, for garnish (optional)
  • Crushed pistachios or almonds, for garnish (optional)

Instructions

  1. Drain the silken tofu if necessary and place it in a blender or food processor.
  2. Add the maple syrup or honey, lemon juice, lemon zest, vanilla extract, and salt.
  3. Blend until the mixture is completely smooth and creamy.
  4. Taste and adjust the sweetness or lemon juice if desired.
  5. Divide the mousse evenly among serving glasses or bowls.
  6. Refrigerate for at least 2 hours until chilled and slightly firm.
  7. Garnish with fresh berries, mint leaves, or crushed pistachios or almonds before serving.

Notes

  • Use maple syrup instead of honey to keep the recipe vegan.
  • Substitute lime juice and zest for a citrus variation.
  • Blend in a tablespoon of coconut cream for a richer texture.
  • Top with toasted coconut flakes, fresh berries, or coconut whipped cream for extra flavor.
  • Store covered in the refrigerator for up to 4 days.
  • Freeze for up to 1 month, then thaw in the refrigerator before serving. The texture may soften slightly after freezing.
