Toad in the Hole is a classic British comfort food featuring savory sausages baked in a light, fluffy Yorkshire pudding batter until golden and crisp. It’s a hearty family meal that’s perfect served with onion gravy and seasonal vegetables.

Ingredients

  • 8 pork sausages
  • 1 tablespoon vegetable oil
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the vegetable oil in a baking dish and add the sausages. Bake for 15 minutes until lightly browned.
  3. Meanwhile, whisk together the flour, eggs, milk, salt, black pepper, and thyme, if using, until smooth. Let the batter rest for 10 minutes if time allows.
  4. Carefully remove the hot baking dish from the oven and immediately pour the batter around the sausages.
  5. Return the dish to the oven and bake for 25 to 30 minutes, or until the batter is puffed, golden brown, and cooked through.
  6. Do not open the oven door while baking to prevent the batter from collapsing.
  7. Serve immediately with onion gravy and your favorite vegetables.

Notes

  • Use good-quality sausages for the best flavor.
  • Allowing the batter to rest helps create a lighter Yorkshire pudding.
  • Fresh rosemary or sage can be added for extra flavor.
  • Serve with mashed potatoes, onion gravy, and peas for a traditional meal.
  • Leftovers can be refrigerated for up to 3 days.
  • Reheat in a 350°F (175°C) oven until crisp and heated through.
  • Freezing is possible for up to 2 months, though the batter is best enjoyed fresh.
