Soft and flavorful tiramisu cookies infused with coffee and topped with a creamy mascarpone frosting and cocoa dusting. A delightful handheld twist on the classic Italian dessert.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee or espresso powder
  • 2 tablespoons milk
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing well.
  5. Dissolve coffee in milk and add to the mixture.
  6. Gradually mix in dry ingredients until a soft dough forms.
  7. Scoop dough onto prepared baking sheet, spacing evenly.
  8. Bake for 10 to 12 minutes until edges are lightly golden.
  9. Cool cookies completely.
  10. Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
  11. Spread or pipe topping onto cooled cookies.
  12. Dust with cocoa powder before serving.
