Ingredients

  • 1 can (15 ounces) green beans, drained
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) garbanzo beans (chickpeas), drained and rinsed
  • ½ cup red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • ⅓ cup apple cider vinegar
  • ¼ cup olive oil
  • 3 tablespoons granulated sugar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine the green beans, kidney beans, garbanzo beans, red onion, and parsley.
  2. In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar, Dijon mustard, salt, and black pepper.
  3. Pour the dressing over the bean mixture.
  4. Toss gently until all ingredients are evenly coated.
  5. Cover and refrigerate for at least 2 hours.
  6. Stir again before serving.
  7. Serve chilled or at room temperature.
