- 1 red bell pepper, diced
- 1 carrot, julienned

- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar or honey
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
- Butter lettuce or iceberg lettuce leaves for wrapping
Instructions
- Heat oil in a large skillet over medium heat. Add the ground chicken and cook, breaking it apart until browned.
- Add the onion, garlic, and ginger to the skillet and cook for 2-3 minutes until fragrant and the onion softens.
- Add the red bell pepper and carrot, cooking for an additional 2-3 minutes until slightly tender.
- Stir in soy sauce, fish sauce, lime juice, and brown sugar (or honey). Add red pepper flakes if you prefer more heat. Let the mixture cook for another 2-3 minutes.
- Remove from heat and mix in fresh cilantro and green onions.
- Spoon the chicken mixture into lettuce leaves, folding them like tacos, and serve immediately.
