Tater Tot Breakfast Casserole combines crispy potatoes, savory breakfast sausage, fluffy eggs, and melted cheddar cheese in one hearty breakfast bake. It is an easy, filling choice for weekend breakfasts, holiday mornings, brunches, and family gatherings.

Ingredients

  • 1 bag (32 ounces) frozen tater tots
  • 1 pound breakfast sausage
  • 8 large eggs
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped green onions, optional
  • Butter or cooking spray, for greasing the baking dish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. Place the breakfast sausage in a large skillet over medium heat. Break it into small crumbles and cook until browned and completely cooked through.
  3. Add the diced onion and minced garlic to the sausage. Cook for 2 to 3 minutes, until the onion begins to soften. Drain any excess grease.
  4. Spread the sausage mixture evenly across the bottom of the prepared baking dish and sprinkle 1 cup of shredded cheddar cheese over the top.
  5. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
  6. Pour the egg mixture evenly over the sausage and cheese.
  7. Arrange the frozen tater tots in an even layer over the egg mixture. There is no need to thaw the tater tots first.
  8. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the tater tots.
  9. Bake uncovered for 40 to 50 minutes, or until the eggs in the center are completely set, the cheese is melted, and the tater tots are golden and crisp.
  10. Remove from the oven and let the casserole rest for 5 to 10 minutes before slicing. Garnish with chopped green onions if desired and serve warm.

Notes

  • Add the tater tots directly from the freezer for easy preparation and the best texture.
  • Drain excess grease from the cooked sausage to help prevent a soggy casserole.
  • Cook vegetables with a high water content before adding them to prevent excess moisture.
  • Cooked crumbled bacon can replace the breakfast sausage, or use a combination of bacon and sausage.
  • For extra vegetables, add sautéed bell peppers, mushrooms, spinach, or broccoli.
  • For a spicy variation, use spicy breakfast sausage and add jalapeños, crushed red pepper, or hot sauce.
  • Monterey Jack, pepper Jack, Colby Jack, or mozzarella can replace some or all of the cheddar cheese.
  • For a meatless version, omit the sausage and use additional sautéed vegetables or vegetarian breakfast sausage.
  • Store leftovers in an airtight container in the refrigerator for 3 to 4 days or freeze individual portions for up to 2 months.
  • Reheat in a 350°F (175°C) oven or air fryer to help restore the crispy texture of the tater tots.
