Ingredients

  • 2 lbs chicken thighs or drumsticks
  • 1 cup plain yogurt
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp lemon juice
  • 1 tbsp paprika
  • 1/2 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp fresh cilantro, chopped (optional)
  • 1 tbsp melted butter (optional)
  • Lime wedges for serving (optional)
  • 1/4 tsp red food coloring (optional)

Instructions

  1. Pat the chicken dry and make shallow cuts in the meat for better flavor absorption.
  2. In a large bowl, combine yogurt, garlic, ginger, lemon juice, paprika, turmeric, cumin, coriander, garam masala, chili powder, salt, and olive oil.
  3. Add the chicken and coat thoroughly with the marinade.
  4. Cover and refrigerate for at least 2 hours or overnight for best flavor.
  5. Preheat the oven to 425°F, grill, or air fryer to medium-high heat.
  6. Arrange the chicken on a baking tray or grill.
  7. Cook for 30 to 35 minutes until the chicken is fully cooked and slightly charred around the edges, turning occasionally.
  8. Brush lightly with butter or oil during cooking if desired.
  9. Let the chicken rest for several minutes before serving.
  10. Garnish with fresh cilantro and lime wedges if desired.
