This Tahini Free Beet Hummus is a vibrant and creamy dip made with earthy beets, chickpeas, and fresh lemon juice. Smooth, flavorful, and naturally vegan, it’s perfect for dipping, spreading, or adding to wraps and bowls.

Ingredients

  • 2 cooked beets
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 24 tbsp water
  • Optional toppings: chopped parsley, sesame seeds, olive oil drizzle, crumbled feta cheese, pumpkin seeds

Instructions

  1. Add the cooked beets, chickpeas, olive oil, garlic, lemon juice, cumin, salt, and black pepper to a food processor.
  2. Blend until smooth, scraping down the sides as needed.
  3. Add water a little at a time until the hummus reaches your desired consistency.
  4. Taste and adjust seasoning if needed.
  5. Transfer the hummus to a serving bowl.
  6. Drizzle with olive oil and add any optional toppings before serving.
  7. Serve with vegetables, crackers, pita bread, or sandwiches.

  • Roasted or steamed beets both work well in this recipe.
  • Canned chickpeas make preparation quick and easy.
  • Add roasted garlic for a milder and sweeter flavor.
