Taco tortilla roll ups are a simple, no-bake appetizer combining creamy, cheesy, and taco-flavored filling wrapped in soft tortillas. They’re perfect for parties, potlucks, or as a make-ahead snack.

Ingredients

  • Flour tortillas (8-10 inch)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 lb cooked ground beef or taco-seasoned ground turkey (optional)
  • 1 packet taco seasoning
  • 2 tbsp chopped green onions
  • 1 can diced green chilies (optional)
  • 1/4 cup chopped black olives (optional)
  • Salsa or pico de gallo for dipping

Instructions

  1. In a mixing bowl, combine softened cream cheese and sour cream until smooth.
  2. Add taco seasoning and mix well.
  3. Stir in shredded cheddar, chopped green onions, and optional ingredients like olives or chilies.
  4. If using cooked ground meat, ensure it’s cooled, then fold it into the mixture.
  5. Spread a generous layer of the filling on each tortilla.
  6. Roll the tortilla tightly into a log shape.
  7. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to firm up.
  8. Once chilled, slice into 1-inch pieces.
  9. Serve with salsa, guacamole, or your favorite dip.

Notes

  • Make ahead: These are great for preparing a day in advance.
  • Ensure any cooked meat is fully cooled to avoid sogginess.
  • Best served cold or at room temperature; no reheating needed.
  • Use soft flour tortillas for easy rolling and clean slicing.
