This taco pasta is a creamy, cheesy one-skillet meal that combines bold taco flavors with tender pasta for the ultimate comfort food. It’s quick, family-friendly, and perfect for busy weeknight dinners.

Ingredients

  • 12 ounces pasta (shells, rotini, or penne)
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 1/2 cup beef broth
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped cilantro (optional, for garnish)
  • Sliced green onions (optional, for garnish)

Instructions

  1. Cook the pasta according to the package directions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Cook the diced onion until softened.
  3. Add the garlic and ground beef, cooking until the beef is browned. Drain excess grease if necessary.
  4. Stir in the taco seasoning until the beef is evenly coated.
  5. Add the diced tomatoes with green chilies, tomato sauce, and beef broth. Simmer for about 5 minutes.
  6. Stir in the cream cheese until completely melted and smooth.
  7. Add the cooked pasta and toss until evenly coated in the sauce.
  8. Sprinkle in the cheddar and Monterey Jack cheeses, stirring until melted and creamy.
  9. Garnish with chopped cilantro and sliced green onions, if desired, and serve immediately.
