Taco Meatloaf combines seasoned ground beef, tortilla chips, pepper Jack cheese, and taco sauce for a flavorful twist on a classic family dinner. This hearty, taco-inspired meatloaf is easy to make and perfect for weeknight meals or leftovers.

Ingredients

  • pounds lean ground beef
  • 1 small onion, finely chopped
  • 1 cup crushed tortilla chips
  • ¾ cup shredded pepper Jack cheese
  • 1 packet taco seasoning
  • 2 large eggs, beaten
  • ½ cup milk
  • ¼ cup taco sauce, plus extra for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, chopped onion, crushed tortilla chips, shredded pepper Jack cheese, and taco seasoning.
  3. In a separate bowl, whisk together the eggs, milk, and taco sauce.
  4. Pour the wet mixture into the beef mixture and mix until evenly combined.
  5. Press the mixture into a lightly greased loaf pan.
  6. Spread a thin layer of taco sauce over the top.
  7. Bake for 45 to 60 minutes, or until the internal temperature reaches 160°F (72°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Substitute ground turkey for a lighter version.
  • Add diced jalapeños for extra heat.
  • Mix in black beans or corn for additional texture and flavor.
  • Top with cheddar or Mexican-blend cheese during the last few minutes of baking.
