Taco Lasagna is a hearty fusion casserole featuring layers of seasoned beef, tortillas, salsa, beans, sour cream, and melted cheese. This crowd-pleasing dish combines taco flavors with the comfort of a layered baked dinner.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¾ cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup salsa
  • 8 flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 cup sour cream
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a large skillet over medium heat until browned and no longer pink.
  3. Drain excess grease and stir in the taco seasoning and water. Simmer for 5 minutes.
  4. Add the black beans and half of the salsa, stirring until combined.
  5. Lightly grease a 9×13-inch baking dish.
  6. Place two tortillas on the bottom of the dish, overlapping as needed.
  7. Spread a portion of the beef mixture over the tortillas, then add layers of sour cream, diced tomatoes, and shredded cheese.
  8. Repeat the layers until all ingredients are used, finishing with cheese on top.
  9. Spoon the remaining salsa over the final layer.
  10. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly.
  11. Let the casserole rest for 10 minutes before slicing.
  12. Garnish with sliced green onions and serve.

Notes

  • Substitute ground turkey or ground chicken for a lighter option.
  • Add corn, bell peppers, or jalapeños for extra flavor and texture.
  • Use corn tortillas instead of flour tortillas if preferred.
  • Add refried beans between layers for a richer casserole.
  • Top with avocado, cilantro, olives, jalapeños, or extra salsa before serving.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
