These Sweet + Salty Quick Pickled Strawberries are juicy, tangy, and lightly sweet, with a savory edge from salt and a little black pepper. They are ready in about 30 minutes with a simple vinegar brine and no canning. Spoon them over yogurt, ricotta toast, salads, grilled cheese, or ice cream.

Ingredients

  • 1 pound (450 g) fresh strawberries, hulled and quartered
  • 1/2 cup (120 ml) apple cider vinegar
  • 1/2 cup (120 ml) water
  • 1/4 cup (50 g) granulated sugar
  • 2 tablespoons honey
  • 1 teaspoon kosher salt
  • 1/2 teaspoon whole black peppercorns
  • 1 small sprig fresh thyme or basil (optional)
  • 1 strip lemon peel (optional)

Instructions

  1. Place the quartered strawberries in a clean 1-quart glass jar or heatproof bowl. Add the peppercorns, herb sprig, and lemon peel if using.
  2. In a small saucepan, combine the vinegar, water, sugar, honey, and salt. Heat over medium heat, stirring, until the sugar and salt dissolve completely, about 2 to 3 minutes. Do not let it boil hard.
  3. Let the brine cool for 5 minutes, then pour it over the strawberries so they are covered.
  4. Let the jar sit at room temperature for 20 minutes, then cover and refrigerate.
  5. Chill for at least 1 hour before serving. The flavor is best after 4 to 6 hours.
  6. Serve the strawberries with a slotted spoon, and save the brine for dressings or drinks.

Notes

  • Let the brine cool slightly: Pouring it hot will cook the strawberries and make them soft. A warm brine keeps them firm.
  • Choose firm berries: Slightly underripe strawberries hold their shape best.
  • Storage: Keep covered in the refrigerator for up to 1 week. They soften over time.
  • Ways to serve: Try them on goat cheese crostini, burrata, avocado toast, grain bowls, pork or chicken, or vanilla ice cream.
  • Use the brine: Whisk it with olive oil for a quick salad dressing, or add it to sparkling water.
  • Variations: Use white balsamic vinegar for a milder flavor, or add a pinch of red pepper flakes for heat.
