Sweet Chilli Sauce is a glossy, sweet, tangy, and mildly spicy condiment made with chillies, garlic, vinegar, and sugar. Perfect for dipping, glazing, and drizzling, this homemade version is fresh, flavorful, and easy to customize.

Ingredients

  • 1 cup water
  • 1/2 cup rice vinegar
  • 3/4 cup granulated sugar
  • 3 garlic cloves, minced
  • 2 red chillies, finely chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for the cornstarch slurry)
  • 1/2 teaspoon salt

Instructions

  1. In a small saucepan, combine the water, rice vinegar, sugar, garlic, chopped chillies, and salt.
  2. Bring the mixture to a gentle simmer over medium heat.
  3. Stir occasionally until the sugar has completely dissolved.
  4. Allow the mixture to simmer for 5 to 7 minutes to develop flavor.
  5. In a small bowl, whisk together the cornstarch and 2 tablespoons of water to create a slurry.
  6. Slowly pour the slurry into the simmering sauce while whisking continuously.
  7. Continue cooking for 1 to 2 minutes until the sauce thickens and becomes glossy.
  8. Remove the saucepan from the heat.
  9. Allow the sauce to cool completely.
  10. Transfer the sauce to a clean jar or bottle and refrigerate until ready to use.

Notes

  • Add extra chillies or cayenne pepper for a spicier sauce.
  • Double the garlic for a more robust garlic flavor.
  • Replace part of the sugar with honey for a richer sweetness.
  • Add freshly grated ginger for additional depth and warmth.
  • Store in an airtight container in the refrigerator for up to 3 weeks.
