1 cup water
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon red chili flakes or fresh chili slices
2 garlic cloves, smashed

1/2 teaspoon mustard seeds or coriander seeds (optional)
Instructions
Place the thinly sliced onions into a clean jar or heatproof container.
In a small saucepan, combine vinegar, water, sugar, salt, chili flakes, garlic, and peppercorns.
