Ingredients

  • 2 cups red onions, thinly sliced
  • 1 cup vinegar (apple cider or white vinegar)
  • 1 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon red chili flakes or fresh chili slices
  • 2 garlic cloves, smashed
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon mustard seeds or coriander seeds (optional)

Instructions

  1. Place the thinly sliced onions into a clean jar or heatproof container.
  2. In a small saucepan, combine vinegar, water, sugar, salt, chili flakes, garlic, and peppercorns.
  3. Bring the mixture to a gentle simmer, stirring until the sugar and salt dissolve.
  4. Carefully pour the hot brine over the onions, ensuring they are fully submerged.
  5. Let the mixture cool to room temperature.
  6. Cover and refrigerate for at least 1 hour before using, preferably several hours or overnight for best flavor.
