Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 1/4 cup vinegar
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 cup water
  • 1 bell pepper, chopped (optional)
  • 1 cup pineapple chunks (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) or prepare a large skillet.
  2. In a mixing bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, salt, and black pepper.
  3. Mix until just combined and form into evenly sized meatballs.
  4. Bake for 18 to 20 minutes or cook in a skillet until browned and fully cooked.
  5. While the meatballs cook, combine ketchup, brown sugar, vinegar, soy sauce, and water in a saucepan.
  6. Bring the mixture to a gentle simmer over medium heat.
  7. Mix the cornstarch with a small amount of cold water to create a slurry, then stir it into the sauce.
  8. Cook until the sauce thickens and becomes glossy.
  9. Add the cooked meatballs to the sauce and toss until fully coated.
  10. Stir in bell peppers and pineapple, if using, and cook for a few more minutes.
  11. Serve warm over rice or with your favorite side dish.
