Ingredients

  1. 3 to 4 pounds beef roast (chuck or round)
    Salt and pepper to taste
    2 tablespoons olive oil
    1 onion, sliced
    3 cloves garlic, minced
    1 cup pineapple juice
    1/2 cup ketchup
    1/4 cup apple cider vinegar
    1/4 cup brown sugar
    1 tablespoon soy sauce
    1 teaspoon ground ginger
    1/2 teaspoon red pepper flakes (optional)

Instructions

Preheat Oven: Preheat oven to 325°F (163°C).

  1. Prepare Roast: Season beef roast generously with salt and pepper.
  2. Sear Roast: Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear roast on all sides until browned, about 3-4 minutes per side. Remove and set aside.
  3. Sauté Onions and Garlic: In the same pan, add onions and garlic and sauté until softened.
  4. Make Sauce: In a bowl, whisk together pineapple juice, ketchup, apple cider vinegar, brown sugar, soy sauce, ginger, and red pepper flakes.
  5. Combine and Roast: Return roast to the pan and pour sauce over it. Cover and roast in the oven for 3-4 hours, basting occasionally, until beef is tender.
  6. Serve: Slice roast and spoon sauce over the top.
