Sunshine Salad is a bright and refreshing fruit salad filled with juicy citrus, tropical fruits, and berries tossed in a light honey-citrus dressing. Perfect for breakfast, brunch, or a healthy dessert, it brings vibrant color and fresh flavor to any table.

Ingredients

  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 2 cups pineapple chunks
  • 2 cups strawberries, sliced
  • 2 kiwis, peeled and sliced
  • 1 cup seedless grapes
  • 1 tablespoon honey
  • 1 tablespoon fresh orange juice
  • 1 teaspoon lemon juice
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash and prepare all the fruit as directed.
  2. Peel and segment the oranges and grapefruit, removing any seeds.
  3. Slice the strawberries and kiwis into bite-sized pieces.
  4. Place all the prepared fruit into a large serving bowl.
  5. In a small bowl, whisk together the honey, orange juice, and lemon juice.
  6. Pour the dressing over the fruit.
  7. Gently toss until all the fruit is evenly coated.
  8. Cover and refrigerate for 15 to 30 minutes before serving for the best flavor.
  9. Garnish with fresh mint leaves if desired.
  10. Serve chilled.
