Sun-Dried Tomato Cream Sauce with Spaghetti is a rich, comforting pasta dish featuring tangy sun-dried tomatoes, garlic, Parmesan cheese, and a silky cream sauce. It’s an easy, restaurant-quality meal that’s perfect for weeknight dinners or special occasions.

Ingredients

  • 12 ounces spaghetti
  • 2 tablespoons oil from the sun-dried tomatoes or olive oil
  • 3 garlic cloves, minced
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons chopped fresh basil or parsley, for garnish

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente according to the package directions. Reserve 1/2 cup of the pasta water before draining.
  2. Heat the sun-dried tomato oil or olive oil in a large skillet over medium heat.
  3. Sauté the garlic for about 30 seconds until fragrant.
  4. Stir in the chopped sun-dried tomatoes and cook for 2 to 3 minutes.
  5. Pour in the heavy cream and add the Italian seasoning and crushed red pepper flakes if using.
  6. Simmer gently for 3 to 5 minutes until the sauce begins to thicken.
  7. Stir in the Parmesan cheese until melted and smooth.
  8. Add the cooked spaghetti and toss until evenly coated, adding reserved pasta water as needed to loosen the sauce.
  9. Season with salt and black pepper to taste.
  10. Garnish with fresh basil or parsley and serve immediately with extra Parmesan if desired.

Notes

  • Add grilled chicken, shrimp, or Italian sausage for extra protein.
  • Stir fresh spinach into the sauce during the final few minutes of cooking.
  • Add sautéed mushrooms for an earthy flavor.
  • Substitute fettuccine, linguine, or penne for the spaghetti.
  • Finish with a squeeze of fresh lemon juice to brighten the rich sauce.
  • Store leftovers in the refrigerator for up to 3 days. Freeze the sauce separately for up to 2 months and reheat gently with a splash of milk, cream, or pasta water.
