These Summer Cold Noodle Bowls are a refreshing combination of chilled noodles, crisp vegetables, fresh herbs, and a tangy soy-lime dressing. They’re light, colorful, and perfect for warm-weather lunches, dinners, or meal prep.

Ingredients

  • 8 oz rice noodles, soba noodles, or whole wheat noodles
  • 1 cucumber, julienned
  • 2 carrots, shredded
  • 1 red bell pepper, thinly sliced
  • 2 cups purple cabbage, shredded
  • 1 cup cooked edamame
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves
  • 2 tbsp sesame seeds
  • 2 tbsp sesame oil or olive oil
  • 3 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the noodles according to the package directions until tender.
  2. Drain and rinse the noodles under cold water until completely chilled.
  3. Whisk together the sesame oil, soy sauce, rice vinegar, lime juice, honey or maple syrup, garlic, and grated ginger to make the dressing.
  4. Prepare the vegetables by slicing and shredding them into thin pieces.
  5. Divide the chilled noodles among four serving bowls.
  6. Arrange the cucumber, carrots, bell pepper, cabbage, edamame, and green onions over the noodles.
  7. Drizzle the dressing evenly over each bowl.
  8. Garnish with fresh cilantro, mint, and sesame seeds.
  9. Gently toss everything together before serving and enjoy chilled.

Notes

  • Add grilled chicken, shrimp, tofu, or salmon for extra protein.
  • Use peanut sauce instead of the soy-lime dressing for a richer flavor.
