Succotash is a colorful, comforting side dish made with sweet corn, tender lima beans, and fresh vegetables. It’s a simple, flavorful recipe that pairs well with grilled meats, roasted chicken, or can be enjoyed as a light vegetarian meal.

Ingredients

  • 2 tbsp butter or olive oil
  • 2 cups sweet corn kernels (fresh, frozen, or canned)
  • 2 cups lima beans (fresh or frozen)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 tsp fresh thyme leaves (optional)
  • 2 tbsp chopped fresh parsley
  • 2 sliced green onions

Instructions

  1. Heat the butter or olive oil in a large skillet over medium heat.
  2. Cook the onion, celery, and red bell pepper until tender, about 5 to 7 minutes.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the lima beans and cook until they begin to soften.
  5. Stir in the corn and continue cooking until the vegetables are tender and heated through.
  6. Add the cherry tomatoes and cook just until they begin to soften.
  7. Season with salt, black pepper, smoked paprika, and thyme if using.
  8. Stir in the parsley and green onions.
  9. Serve warm as a side dish or light main course.

  • Include zucchini, okra, or summer squash for seasonal variation.
  • Stir in a splash of heavy cream or sprinkle with Parmesan for a creamy version.
