Ingredients

  • 1 1/2 pounds boneless chicken breasts or thighs
  • 8 corn tortillas or flour tortillas
  • 2 cups corn kernels
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Cotija cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • Jalapeño slices (optional)
  • Lime wedges for serving

Instructions

  1. In a small bowl, combine the chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
  2. Rub the seasoning mixture evenly over the chicken.
  3. Heat the olive oil in a skillet over medium-high heat.
  4. Cook the chicken for 5–7 minutes per side until fully cooked and golden brown.
  5. Remove the chicken from the skillet and let it rest before slicing into strips or cubes.
  6. In the same skillet, cook the corn kernels until slightly charred.
  7. In a bowl, combine the charred corn, mayonnaise, sour cream, lime juice, Cotija cheese, and chopped cilantro.
  8. Warm the tortillas in a dry skillet or over an open flame.
  9. Fill each tortilla with chicken and the street corn mixture.
  10. Top with diced red onion, extra Cotija cheese, cilantro, and optional jalapeño slices.
  11. Serve immediately with lime wedges.
