Strawberry White Chocolate Madeleines are delicate French sponge cakes with crisp edges, tender centers, and bursts of fresh strawberries and creamy white chocolate. These elegant shell-shaped treats are perfect for tea time, brunch, or a light dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup fresh strawberries, finely diced
  • 1/2 cup white chocolate chips or chopped white chocolate
  • 1 tsp lemon zest (optional)
  • Powdered sugar, optional for dusting

Instructions

  1. Grease and lightly flour a madeleine pan, then preheat the oven to 375°F (190°C).
  2. Whisk together the all-purpose flour, baking powder, and salt in a bowl.
  3. Beat the eggs and granulated sugar until pale, thick, and fluffy.
  4. Mix in the vanilla extract, honey, and optional lemon zest.
  5. Gently fold the dry ingredients into the egg mixture until just combined.
  6. Slowly fold in the melted butter until the batter is smooth.
  7. Carefully stir in the diced strawberries and white chocolate.
  8. Cover the batter and refrigerate for at least 30 minutes.
  9. Spoon the batter into the prepared madeleine molds, filling each about three-quarters full.
  10. Bake for 9–11 minutes, or until the edges are lightly golden and the centers spring back when gently touched.
  11. Cool the madeleines in the pan for a few minutes before transferring them to a wire rack.
  12. Dust with powdered sugar before serving if desired.

Notes

  • Chilling the batter helps create the signature madeleine hump.
  • Pat thawed frozen strawberries completely dry before adding them to the batter.
  • Drizzle melted white chocolate or dip half of each madeleine for an elegant finish.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze for up to 2 months and warm plain madeleines in a 300°F (150°C) oven for 3–5 minutes before serving.
