These Strawberry Turnovers are flaky, buttery pastries filled with a sweet homemade strawberry filling and baked until golden brown. Perfect for breakfast, brunch, dessert, or an afternoon snack, they’re easy to make and taste just like a bakery favorite.

Ingredients

  • 2 sheets puff pastry, thawed
  • 2 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon zest or 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 large egg, beaten (for egg wash)
  • Coarse sugar, optional for topping
  • 1 cup powdered sugar (optional, for glaze)
  • 2 tbsp milk (optional, for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the chopped strawberries, granulated sugar, cornstarch, lemon zest or lemon juice, and vanilla extract.
  3. Cook over medium heat, stirring frequently, until the filling thickens. Remove from the heat and let it cool completely.
  4. Unfold the thawed puff pastry sheets and cut each into four equal squares.
  5. Spoon a small amount of the cooled strawberry filling into the center of each pastry square.
  6. Brush the edges with beaten egg, fold each square into a triangle, and press the edges firmly with a fork to seal.
  7. Cut a small slit in the top of each turnover to allow steam to escape.
  8. Brush the tops with additional egg wash and sprinkle with coarse sugar if desired.
  9. Bake for 18–22 minutes, or until the turnovers are puffed and golden brown.
  10. Allow the turnovers to cool slightly. If desired, whisk together the powdered sugar and milk to make a glaze, then drizzle it over the cooled turnovers before serving.

Notes

  • Frozen strawberries can be used if thawed and drained before cooking.
  • Avoid overfilling the pastries to prevent leaking during baking.
  • Store leftovers at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze baked turnovers for up to 2 months and reheat in the oven or air fryer for best texture.
  • Try adding cream cheese, mixed berries, sliced almonds, or white chocolate for delicious variations.
