Strawberry Matcha Boba is a refreshing layered drink made with sweet strawberry puree, creamy milk, earthy matcha, and chewy tapioca pearls. This colorful bubble tea is both visually stunning and deliciously satisfying.

Ingredients

  • 1 cup fresh strawberries, chopped
  • 2 tablespoons sugar or honey
  • 1 teaspoon matcha powder
  • 1/4 cup hot water
  • 1 cup milk
  • 1/2 cup ice cubes
  • 1/2 cup black tapioca pearls
  • 4 cups water
  • 2 tablespoons brown sugar

Instructions

  1. Cook the tapioca pearls according to the package instructions.
  2. Drain the pearls and toss them with brown sugar while still warm.
  3. In a small saucepan, cook the chopped strawberries with sugar or honey over medium heat for 5 minutes until softened and syrupy.
  4. Allow the strawberry mixture to cool slightly.
  5. In a small bowl, whisk the matcha powder with hot water until smooth and frothy.
  6. Spoon the sweetened boba into serving glasses.
  7. Add the strawberry mixture to the bottom of each glass.
  8. Fill the glasses with ice cubes.
  9. Pour the milk gently over the ice.
  10. Slowly pour the matcha mixture on top to create layered sections.
  11. Serve immediately with a wide straw and stir before drinking if desired.
