Ingredients

  • 1 package (3 ounces) strawberry gelatin mix
  • 1 container (8 ounces) whipped topping, thawed
  • 2 cups fresh strawberries, diced
  • 2 cups mini marshmallows
  • 1 can (20 ounces) crushed pineapple, well drained
  • 1 cup cottage cheese
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. In a large mixing bowl, combine the cottage cheese and strawberry gelatin mix.
  2. Stir until the gelatin is evenly incorporated.
  3. Fold in the whipped topping until smooth and fluffy.
  4. Add the drained crushed pineapple and diced strawberries.
  5. Stir gently to combine.
  6. Fold in the mini marshmallows.
  7. Add the chopped nuts if using.

Notes

  • Fresh strawberries provide the best flavor and texture.
  • For a richer version, mix in softened cream cheese.
  • Add bananas just before serving to prevent browning.
  • Store covered in the refrigerator for up to 3 days.
  • Freezing is not recommended as the texture may become watery after thawing.
