Strawberry Custard Tart is a classic dessert featuring a buttery tart crust filled with silky vanilla custard and topped with fresh strawberries. Elegant and refreshing, it is perfect for spring celebrations, afternoon tea, and special occasions.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 2 tablespoons granulated sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons apricot jam or strawberry preserves, warmed
  • 1 tablespoon water

Instructions

  1. Combine the flour and sugar in a mixing bowl.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the egg yolk and cold water, mixing until a dough forms.
  4. Shape the dough into a disk, wrap, and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the dough and press it into a 9-inch tart pan.
  7. Prick the bottom with a fork, line with parchment paper, and fill with pie weights.
  8. Blind bake for 15 minutes, then remove the weights and bake for an additional 10 to 12 minutes until golden brown. Cool completely.
  9. Heat the milk and heavy cream in a saucepan until warm.
  10. In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and salt until smooth.
  11. Gradually whisk the warm milk mixture into the egg mixture.
  12. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
  13. Remove from the heat and stir in the vanilla extract.
  14. Transfer the custard to a bowl, cover the surface with plastic wrap, and cool completely.
  15. Spread the cooled custard evenly into the tart shell.
  16. Arrange the sliced strawberries decoratively over the custard.
  17. Mix the warmed jam with water and brush over the strawberries for a glossy finish.
  18. Refrigerate for at least 1 hour before serving.

  • Use raspberries, blueberries, blackberries, or mixed berries as an alternative topping.
  • Brush melted white chocolate onto the cooled crust before adding custard to help keep it crisp.
