Strawberry Crunch Poke Cake is a moist strawberry cake soaked with creamy strawberry filling and topped with fluffy cream and buttery strawberry-cookie crunch. Inspired by strawberry shortcake ice cream bars, this chilled dessert is perfect for parties, potlucks, and summer celebrations.

Ingredients

  • Strawberry cake mix
  • Large eggs
  • Vegetable oil
  • Water
  • Sweetened condensed milk
  • Strawberry sauce or strawberry preserves
  • Milk, if needed for thinning
  • Whipped topping or freshly whipped cream
  • Cream cheese, softened, optional
  • Powdered sugar, optional
  • Vanilla extract
  • Golden sandwich cookies or vanilla sandwich cookies
  • Freeze-dried strawberries
  • Unsalted butter, melted
  • Fresh strawberries, optional
  • Strawberry sauce, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-by-13-inch baking dish.
  2. Prepare the strawberry cake batter according to the package instructions, combining the cake mix with eggs, vegetable oil, and water.
  3. Pour the batter into the prepared baking dish and bake according to package directions, usually 25–30 minutes, until a toothpick inserted near the center comes out clean or with a few moist crumbs.
  4. Remove the cake from the oven and let it cool for 10–15 minutes.
  5. While the cake is still slightly warm, use the rounded handle of a wooden spoon to poke deep holes across the surface about 1 inch apart.
  6. Combine the sweetened condensed milk with the strawberry sauce or preserves. If necessary, add a small amount of milk to make the mixture easy to pour.
  7. Slowly pour the strawberry filling over the cake, concentrating it over the holes, then gently spread any remaining filling across the surface.
  8. Refrigerate the cake for at least 2 hours, or until completely chilled.
  9. Crush the sandwich cookies and freeze-dried strawberries into coarse crumbs.
  10. Combine the cookie and strawberry crumbs with melted butter until a loose, crumbly topping forms.
  11. Spread whipped topping evenly over the chilled cake. For a richer variation, beat softened cream cheese with powdered sugar and vanilla before folding in the whipped topping.
  12. Scatter the strawberry crunch mixture generously over the entire cake.
  13. Refrigerate the finished cake for at least 1 additional hour so all the layers are thoroughly chilled.
  14. Before serving, garnish with fresh strawberry slices or a drizzle of strawberry sauce, if desired.

Notes

  • For a strawberry cheesecake variation, use softened cream cheese, powdered sugar, vanilla, and whipped topping for the creamy layer.
  • Add finely diced fresh strawberries beneath the creamy topping for additional strawberry flavor.
  • Vanilla or white cake can replace strawberry cake for a lighter base that emphasizes the strawberry filling and topping.
  • Use freeze-dried rather than fresh strawberries in the crunch mixture to prevent excess moisture from softening the cookie crumbs.
  • For the crispiest topping, add the strawberry crunch only a few hours before serving.
  • The cake can be prepared the night before to give the strawberry filling additional time to soak into the cake.
  • Store the finished cake covered in the refrigerator and consume within 3–4 days.
  • The plain baked cake can be frozen before adding the filling and toppings, but refrigeration is preferred once the dessert is fully assembled.
