Soft and tender strawberry cookies bursting with fresh fruity flavor, perfect for a light and cheerful treat any time of year.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, finely chopped or mashed
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Mix in the chopped or mashed strawberries gently.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in white chocolate chips if using.
  8. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them apart.
  9. Bake for 12 to 15 minutes until edges are lightly golden.
  10. Cool on the baking sheet briefly, then transfer to a wire rack.
