Strawberry Cheesecake Eggroll Bites are a delightful dessert that combines the rich, creamy texture of cheesecake with the crispy crunch of an eggroll wrapper. Filled with fresh strawberries and a creamy cheesecake mixture, these bites are perfect for parties or a sweet treat. Fry, air fry, or bake them to golden perfection, and enjoy this easy-to-make, indulgent dessert.

Ingredients

  • 8 eggroll wrappers
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup granulated sugar (for coating)
  • 1/2 teaspoon cinnamon (for coating)
  • Cooking spray or vegetable oil (for frying)

Instructions

  • Prepare the strawberry filling by chopping the strawberries into small pieces.
  • In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  • Lay an eggroll wrapper flat on a clean surface. Spoon about 2 tablespoons of the cream cheese mixture into the center of the wrapper, then add a few pieces of chopped strawberries on top.
  • Carefully fold in the sides of the eggroll wrapper and roll tightly, sealing the edges with a little water.
  • In a small bowl, combine the granulated sugar and cinnamon for the coating. Set aside.
  • Preheat your air fryer to 375°F (190°C) or heat oil in a frying pan over medium heat.
  • If using an air fryer, lightly spray the eggrolls with cooking spray and cook for 6-8 minutes, turning halfway through, until golden and crispy.
  • If frying, carefully place the eggrolls in the hot oil and fry for 2-3 minutes on each side until golden and crispy.
  • Once cooked, remove the eggrolls from the fryer and immediately roll them in the cinnamon-sugar mixture.
  • Serve warm with a drizzle of chocolate or caramel sauce, if desired, and enjoy!

Notes

  • To make these eggrolls gluten-free, use gluten-free eggroll wrappers or rice paper wrappers.
  • If you prefer, you can prepare the eggrolls ahead of time and refrigerate them before frying or air frying.
  • For a twist, add mini chocolate chips to the cream cheese mixture for a chocolate-strawberry flavor combo.
  • Freeze unbaked eggrolls for up to 2-3 months. Fry or air fry from frozen, adding a few extra minutes to the cook time.
