Strawberry Charlotte Cake is an elegant no-bake dessert featuring ladyfinger biscuits wrapped around a light and creamy strawberry filling. Fresh strawberries and airy whipped cream make it a beautiful centerpiece for spring and summer gatherings.

Ingredients

  • 24 ladyfinger biscuits
  • 4 cups fresh strawberries, hulled and divided
  • 2 cups heavy whipping cream
  • 8 oz mascarpone cheese or cream cheese
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 tablespoon fresh lemon juice
  • Additional strawberries for garnish

Instructions

  1. Line the sides of a springform pan with ladyfinger biscuits, standing them upright with the rounded sides facing outward.
  2. Puree 2 cups of the strawberries until smooth and set aside.
  3. Sprinkle the gelatin over the cold water in a small bowl and let it bloom for several minutes.
  4. Gently warm the gelatin mixture until dissolved, then allow it to cool slightly.
  5. In a large bowl, beat the mascarpone or cream cheese with the powdered sugar and vanilla extract until smooth.
  6. Mix in the strawberry puree and lemon juice until fully combined.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. Fold the whipped cream into the strawberry mixture.
  9. Stir in the dissolved gelatin and fold gently until evenly incorporated.
  10. Chop the remaining strawberries and fold them into the filling.
  11. Pour the filling into the prepared pan and smooth the top.
  12. Refrigerate for at least 6 hours or overnight until fully set.
  13. Carefully remove the cake from the pan and garnish with fresh strawberries before serving.
